This is both an activity and a food. Pig Pickin’ is North Carolina barbeque, where a whole hog is roasted over a grill and eaten with vinegar-based sauce. The eastern North Carolina sauce is a combination of apple cider vinegar, apple juice or white grape juice, brown sugar, and cayenne pepper. More or less. It is definitely not a thick, tomato-based sauce, so don’t even go there if you’re talking favorite North Carolina foods.
