Chef Santos Martinez from Capricho was my next target as I eyed the mole tostadas he presented. I’ve been lucky enough to do some considerable traveling and have had the opportunity to try a lot of great mole dishes. Throughout the west coast and in Mexico, if I have the opportunity to grab onto some mole, count me in. I’ll honestly say that his mole was one of the best I’ve ever eaten. A combination of family recipes a close family friend’s, the resulting mole was one that any abuela would be proud to serve.

Smooth, dark and smoky with just the right amount of spice, Chef Santos’ mole proudly represented mole in its purest form while at the same time showing what can be done to a simple sauce if given days of preparation and nurturing.

Served with a simple spiced tostada, queso fresco and a radish slice, it exemplified street food from Mexico. While it would be cheesy to make reference to “que Bueno” or “ole,” I’m going to do it anyways because I don’t know how to say “dude, I’d eat these every day” in Spanish.
