Dowless Casserole: Recipes from The Verandas Bed & Breakfast

This breakfast casserole from Wilmington’s one of the oldest bed and breakfast inns, The Verandas, is deceptively simple. With its elegant presentation, Dowless Casserole will delete your breakfast guests. It is perfect for Easter brunch, or a special Mothers Day breakfast.

You can make Hollandaise sauce from a packet, like our favorite from Knorr, or splurge and make it from scratch. We find that taking a shortcut here doesn’t effect the final result.

Dowless Casserole

Preheat oven to 350 degrees.

Lightly butter and line the base of a small ramekin with a layer of Black Forest Ham or Canadian Bacon.

Add a layer of fresh spinach.

Add a tablespoon of Hollandaise sauce.

Add two eggs, without breaking the yolks.

Cover with layer of spinach.

Add a layer of shredded mozzarella cheese.

Cover with more Hollandaise sauce.

Bake for 30 minutes, or until done.

Cover with remaining warm Hollandaise, and serve with garnish of steamed asparagus and a flower made from a green onion.
