Strawberry Pecan Clafouti

Strawberry pecan clafouti is a lovely French dessert, perfect for a spring luncheon or picnic. Casual, serve the clafouti right from the baking dish with a generous dollop of whipped cream.

Ingredients

  • 1 lb Fresh strawberries
  • 1/2 cup chopped Pecans
  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1 cup turbinado sugar
  • 1 1/2 cups half and half
  • 3 eggs
  • 1 teaspoon vanilla extract
  • Butter to grease baking dish

Instructions

  1. Preheat the oven to 350 F. Butter the bottom and sides of a deep pie plate – you will serve from this dish as well, so choose a pretty one! Layer the strawberries on the bottom of the dish. Sprinkle chopped pecans across the top of the strawberries.
  2. Combine flour, sugar and salt in a bowl. Lightly beat eggs in another bowl. Whisk half and half and vanilla into the beaten eggs. Pour the egg mixture into the dry ingredients, stirring quickly to avoid lumps.
  3. Pour the custard over the strawberries and pecans in the pie dish.
  4. Bake for 45-50 minutes or until the edges are set and nicely browned. The center of your strawberry pecan clafouti will be soft-set. Cool before serving.
