Banana Strawberry Breakfast Muffins

Banana Strawberry Breakfast Muffins

Banana strawberry breakfast muffins have great banana flavor with just a hint of strawberry from the flavored Greek yogurt. This is a great breakfast muffin, as it is hearty and not too sweet. You could add walnuts or raisins to make it even more satisfying. The trick is to not overmix. Blend the wet ingredients and then quickly fold in the dry ingredients, until just mixed.

Preheat oven to 400.

Mix until blended:
2 large very ripe bananas
1/2 cup strawberry Greek yogurt
2 eggs
5 tablespoons melted butter
3 tablespoons honey or maple syrup

Fold in:
1 cup quick cook oats
1 cup almond flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt

Let us reiterate: don’t overmix. Spray jumbo muffin tin with nonstick baking spray. Divide between six muffins. Top with sprinkle of oats and very liberally with cinnamon sugar. These are not overly sweet, so you can load up the muffin top with sugar.

Bake for 15 minutes or until the tops spring back when lightly touched. Let cool in pan.
