With my palate cleansed and my motivation restored, I stepped up to Chef Sam Cahoon’s table. Anyone who knows anything about food in Wilmington knows about Sam, as he’s racked up quite the reputation in a short amount of time.

Proudly representing his restaurant Savorez, he and his Executive Sous Chef presented Seared Tuna Tostadas that were absolutely amazing.

No, seriously, I mean AMAZING!

Fresh tuna marinated with Sriracha, yuzu and soy sauce was crusted with sesame seeds and seared to absolute perfection then placed on a tostada like a supermodel laying on a magazine cover. Layered with avocado, pineapple salsa, jalapeno, yuzu aioli, pickled shallots, cilantro and a little bit of caviar just to make you lose your mind, this bite was absolutely perfect.

I’m not going to lie, after I tasted the first one, I went back two more times with no shame in my game. I have no desire or plan to end up on death row, but if I ever am, I’m asking for these as my last meal. A staple on his menu, I can honestly say that I’m going to Savorez just to get more of these.
