Next came Aubriana’s Chef Josh Seward and his beet and crab gazpacho. As the old adage says, we eat with our eyes first, and this dish perfectly exemplified that saying. I’m not sure what sort of celestial moon dust or harnessed neon juice he smuggled in from another dimension to create these colors but beautiful does not even begin to describe it. I almost felt guilty eating such a beautiful substance, but not too guilty because I inhaled it.

The exceptionally smooth gazpacho was a refreshing tribute to the beets used while crab meat and mango accentuated it better than a sharp tie with an expensive suit. I’ll be honest, trying this dish took me away from the event as I felt I should have been dining with white linen at a seaside café in another country. Regardless, cardboard plates or white linen, this dish was delicious and a perfect light bite for a hot day.
